Hummus

This is a low chemical version of hummus, suitable for those on an elimination diet. It is incredibly quick and easy to prepare. It is delicious with crackers or pita crisps, or served in a wrap with leftover roast lamb, salad and tzatziki.

Hummus

440 g can chickpeas, drained and rinsed
3 tbsp canola oil
1/3 tsp citric acid
Salt for seasoning

1. Place chickpeas, oil and citric acid in a food processor and blend until smooth. Season with salt to taste.

Tania’s tip
• You can also add 1 clove of crushed garlic to this recipe if you would like a more authentic flavour.
• This recipe is gluten free and dairy free.
• This recipe is suitable on a low chemical elimination diet. If you do not require a low chemical diet, you can substitute olive oil for the canola oil, and a squeeze of fresh lemon juice for the citric acid.
